摘要: 本研究主要探討以三種不同的乾燥方法(40℃除濕乾燥、40℃熱風乾燥、以及日曬乾燥)對台灣原生土肉桂( Cinnamomum osmophloeum Kaneh. )葉揮發性成分、抗氧化特性以及感官品評等特性之影響。利用水蒸氣蒸餾法萃取揮發性成分,以GC和GC/MS分離及鑑定。 台北地區與中寮地區對台灣原生土肉桂葉其揮發性成分的萃取率,均以新鮮葉子最高,其次依序為除濕乾燥、熱風乾燥、日曬乾燥最低。在揮發性成分中,以反式肉桂醛百分比含量最高。台北地區與中 寮地區之反式肉桂醛含量,經除濕乾燥後分別為85.49%與88.95%,均分別高於熱風乾燥後之81.89%與68.16%。 在抗氧化特性方面,無論是台北地區或中寮地區,清除DPPH自由基之能力,均是除濕乾燥優於熱風乾燥或日曬乾燥。對於還原力與總抗氧化能力(去除ABTS陽離子自由基能力) 而言,亦有相類似之結果。 在感官品評方面,台北地區或中寮地區之土肉桂葉經除濕乾燥後,不論在葉色、水色、香氣與滋味以及感官總評上均顯著優於熱風乾燥或日曬乾燥。 綜合各項試驗結果可得知,以除濕乾燥機乾燥之土肉桂葉可縮短乾燥時間、降低平衡含水率,且可得到較高之肉桂醛含量、較佳之抗氧化能力和較好的感官評價。故以40℃除濕乾燥為最好之土肉桂乾燥方式。
The volatiles from leaves of indigenous Cinnamomum osmophloeum Kaneh. were extracted, using a steam distillation technique and were characterized by using Gas Chromatography equipped with Mass detector. More than ten volatiles compounds were identified. Three different drying treatments were used in this study: (A). low humidity drying at 40℃, (B). oven-drying at 40℃, and (C). solar drying. The highest volatiles yields at Jhongliao and Taipei areas was the fresh leaf, while the second were low humidity drying at 40℃, oven-drying at 40℃, and solar drying, respectively. Analysis of volatiles at Taipei area revealed that the higher trans-cinnamaldehyde content, accounting for 85.490% in low humidity-drying at 40℃, and 81.890% in oven-drying at 40℃, respectively. While, analysis of volatiles at Jhongliao area, revealed that the higher trans-cinnamaldehyde content, accounting for 88.949% in low humidity-drying at 40℃, and 90.190% in solar-drying at 40℃, respectively. The antioxidant activities of Cinnamomum osmophloeum kaneh. leaves at Taipei or Jhongliao area treated by low humidity-drying at 40℃ had better performance of DPPH scavenging ability than the oven-drying at 40℃. Similar results were indicated at the reducing ability and total antioxidant activity. The overall sensory evaluation results indicated that the best performance was obtained with low humidity-drying at 40℃. while the second were oven-drying at 40℃, and solar drying, respectively. As a conclusion of these experiments, the appearance of color, moisture contents, antioxidant activity and cinnamaldeyhde content of Cinnamomum osmophloeum kaneh. leaf treated by low humidity 40℃ drying methods was significantly better than the other methods. It shortened the drying time and lowered the moisture content. Therefore, low humidity 40℃method could be defined as the optimum drying method.
