摘要: 本實驗欲篩選產胞外多醣乳酸菌製得酸酪乳,探討胞外多醣對酸酪乳質地的貢獻(降低乳清析出率,維持產品質地),並更進一步探討胞外多醣本身所具有的生理機能,是否可作為益生物質,及其協助降低血膽固醇,結腸癌發生機率的效益.
Exopolysaccharide produced by lactic acid bacteria can assist in yogurt texture maintenance. This study is carried out to select exopolysaccharide producing lactic acid bacteria in the manufacture of yogurt to see how it can help in texture promoting. Besides, the exopolysaccharide itself owns some health promoting characters which would be examined with respect to prebiotics and cholesterol lowering in this study.
