The aims of this study are to: (1) determine the total bacterial count in chicken carcass wash fluid; (2) examine the Salmonella isolation rate from different chicken organs; and (3) determine the serovar of Salmonella isolated. The objects to be monitored in this study are broilers and simulate native chickens that are processed at live bird markets and abattoirs. The parameters, including breed of chicken, site of slaughter and serovar of Salmonella isolates, will be compared and analyzed by chi-square test. These results will provide useful information in the improvement of poultry slaughter process.
