Hygienic Analysis of Chicken Meat from Live-Bird Market

The aims of this study are to: (1) determine the total bacterial count in chicken carcass wash fluid; (2) examine the Salmonella isolation rate from different chicken organs; and (3) determine the serovar of Salmonella isolated. The objects to be monitored in this study are?simulate native chickens that are processed at live bird markets. The parameters, including?APC from wash fluid and organs of slaughter and serovar of Salmonella isolates, will be compared and analyzed by ANOVA test. These esults will provide useful information in the improvement of poultry slaughter process.
