關鍵字: | tea beverage;現調茶飲料;bacteria analysis film;total bacterial count;coliform count;細菌檢測片;總生菌數;大腸桿菌群 | 出版社: | 食品暨應用生物科技學系 | 摘要: | 本研究比較細菌快速檢測片與傳統濾膜檢測法在食品微生物之分析結果,期望快速檢測片可替代傳統濾膜檢測法,用於小型飲料店之例行性食品微生物檢測。實驗取台中市飲品店所販售之綠、紅茶為樣品,以濾膜法及CHISSO細菌快速測試片檢測總生菌數及大腸桿菌群,了解兩種方法之相關性是否良好。結果證實細菌快速檢測片可取代濾膜法,提供飲品業者一簡便、快速之檢測方法,落實衛生自主管理,以確保消費者飲用之衛生安全。 民國96年7月至10月間,於台中市之8個行政區取樣,共計取樣綠茶及紅茶各48個樣品。所有樣品皆以傳統濾膜法與CHISSO檢測片兩種方法檢測總生菌數及大腸桿菌群。檢測結果顯示,以T test分析,綠茶以濾膜法檢測總生菌數之不合格率為37.5 %,檢測試片為50.0 %,兩種方法間之檢測效果無顯著差異(P>0.05)。紅茶以濾膜法與測試片檢測總生菌數之不合格率均為25.0 %,檢測效果亦無顯著差異(P>0.05)。綠茶以濾膜法檢測大腸桿菌群之不合格率為64.58 %,檢測片為77.08 %,兩種方法間之檢測效果無顯著差異(P>0.05)。紅茶以濾膜法與檢測片分別檢測大腸桿菌群之不合格率分別為70.83 %、62.50 %,兩者亦無顯著差異(P>0.05)。綜合上述結果可知檢測總生菌數與大腸桿菌群是否符合衛生規範時,傳統濾膜法與CHISSO檢測片兩者具有相同之檢測結果。 實驗結果可知本次抽檢之茶飲符合衛生規範之比例偏低,衛生有待加強,特別是大腸桿菌群菌數偏高,表示水源可能遭受污染,需特別注意。傳統濾膜檢測法與CHISSO檢測片在檢測茶飲料之總生菌數與是否符合衛生規範方面,具有相同之檢測效果。 The aim of this study was to compare the detection results between CHISSO bacteria analysis film and traditional membrane filtration test and to evaluate the potential of using CHISSO films for replacing traditional membrane filtration tests in small-scale beverage stores. During the period of July to October 2007, 96 samples of green tea and black tea products were collected from the beverage stores in the 8 districts of Taichung City. Membrane filtration test and CHISSO film were used to investigate the total bacterial count and the coliform count. T test was used to analyze the unqualified rate of both total bacterial and coliform counts in green tea and black tea products. The results showed that there was no significantly difference (37.5%, 50.0%; 25.0%, 25.0%, respectively; P > 0.05) between both detection methods. For the unqualified rate of coliform count from green tea and black tea products, both detection methods had no significantly difference (64.58%, 77.08%; 70.83%, 62.50%, respectively; P > 0.05). Consequently, for the qualified rate of total bacteria count and coliform count in green tea and black tea products, traditional membrane filtration test and CHISSO film showed the equivalent results. In conclusion, the qualified ratio of green and black tea products from beverage stores was quite low, especially the coliform counts. The cause of the low qualified ratio may be due to the contaminated water. The beverage stores need to pay more attention on their hygiene situation and water quality. Furthermore, CHISSO film and traditional membrane filtration test for the analysis of total bacterial count and coliform count showed an identical result, which providing the CHISSO film a potential food microbial analysis method in the food hygiene control for small-scale beverage stories. |
