dc.description.abstract | 洋蔥與分蔥係中式食品中常用之香辛蔬菜,在中國菜餚調理過程中扮演極重要之角色 。本論文旨在探討八種不同極性之溶劑所萃取之洋蔥與分蔥精油樹脂之各種性狀,諸 如香氣成分、風味強度、抗氧化性、誘突變性與抗突變性之差異性,以評估洋蔥及分 蔥精油樹脂之較佳製備條件。 洋蔥與分蔥之揮發性成分相似,但各成分之相對含量並不相同,故呈現不同風味。 洋蔥與分聰精油樹脂均以極性較低之溶劑萃取者其風味較強,且揮發油及樹脂之含量 較高。 洋蔥與分蔥以二氯甲烷及乙醚萃取之精油樹脂其抗氧化性較強。 洋蔥與分蔥精油樹脂於2u g及20u g/plate 時均不具誘突變性。 洋蔥與分蔥精油樹脂均以乙醚萃取者對誘突變物IQ之抑制突變效果最強。 洋蔥與分蔥精油樹脂分別以二氯甲烷及乙醚為最傷萃取溶劑。 | zh_TW |
