The project begins to set up a survey program of Salmonella enterica serotype Enteritidis (Salmonella Enteritidis) in avian slaughter house in response to an increasing number of human illnesses associated with the consumption of chichen meat. The objectives of this survey program are to: establish the unmitigated risk of foodborne illness from Salmonella, identify and evaluate potential risk reduction strategies, identify data needs, and establish the data base of Salmonella for chichen meat.
