摘要: 
經由對Lactobacillus acidophilus菌株以控低溫真空 乾燥進行乾燥所得的結果發現,控低溫真空乾燥 可得到與冷凍乾燥相近的存活率,值得進一步研 究和開發.在菌株培養時添加Ca/sup++/離子,則培養 出之乳酸菌具有抵抗凍結及乾燥傷害的能力,而 甘油保護劑的添加也能夠提高乾燥後菌株的存活 率.另外,根據前人對Lactobacillus bulgaricus乳酸菌進 行研究所得之結果,發現Ca/sup ++/離子,甘油及脫脂 乳固形物的添加,皆可提高菌株在凍結及乾燥後 的存活率,惟濃度必須適當才能得到最佳的保護 效果.
