本文主旨分析莫妮卡‧張的小說《鹽之書》中,一位來自於越南的家庭廚師--濱(Binh)--透過日常生活中的煮食經驗和法國社會群體連結,並和用餐者產生親密的情感。濱在遭遇多次拒絕之後,最終得到百花街27號家庭廚師的職位,並替兩位美國主人--葛楚史坦以及托克拉斯小姐--準備三餐。濱的敘述呈現他和周遭的日常生活,透漏自身在法國的生存窘境,以及和法國上流群體之間的關係。濱的生命故事--被殖民的經驗、航行人生以及在法國的放逐生涯,增益了他的煮食技巧,並豐富了食物的味道。兩位美國主人的賞識,使得濱的食物成了生命藝術。食物變成兩方各自生活經驗的交流中心與溝通媒介,也因此調配出獨特的飲食美學。在第一章「一名廚師的日常生活:越南歷史和後殖民境遇裡的飲食實踐」中,我將探討莫妮卡‧張如何透過濱的敘述,顛覆以往日常生活書寫總是受西方前資本主義知識分子宰制的傳統。濱並且道出被殖民的歲月裡,法國強權如何滲透越南文化。如此的滲透過程最終成為價值,受益於濱。第二章「自我慾望及親密:後殖民認同和食物表象」的部分則分析,後殖民境遇對於法國的認同如何成為濱的生命認同。法國文化影響了濱的飲食實踐,增添了濱的食物多樣性;如此的多樣性展現濱如何在法國與周遭社群和睦相處。最後一章「生存、親密及社群:社會美學以及飲食藝術之情感」著重飲食、情感、和社會三方面之間的美學。

Abstract
This thesis aims to analyze how a Vietnamese live-in cook, Binh, connects the French community through his cuisine in Monique Truong’s The Book of Salt. The connection develops a sense of intimacy with the diners who appreciate Binh’s dishes. Truong portrays the everyday life of a third world cook, Binh, who tries to apply for a position as a live-in cook in France. Binh’s narration exposes the everyday life of him and the community, indicating his struggles as well as relationships with the community. Being rejected for many times, Binh finally becomes a live-in cook at 27 rue de Fleurus, cooking for two American master—GertrudeStein and Miss Toklas. Binh’s life experiences: colonized experiences, navigation and his exile in France enrich both his cooking skills and flavors. Through the diners’ appreciation of his culinary art, Binh and the diners develop aesthetics by the interaction of individuals. The purpose of this thesis is to discuss how Binh’s dishes ensure his survival in France. In the opening chapter, I will discuss how Truong uses Binh’s narration to subvert the traditional everyday writing by the Western intellectuals. With Binh’s observation, we can see Vietnam is dominated by France. This domination becomes a legacy for Binh that I will elaborate in chapter two. The post-colonial identity of Binh enhances his life experiences. These experiences diversify the flavor of Binh’s cuisine. The diversity of the cuisine exposes how Binh makes peace with the French community around him. In my concluding chapter, I analyze the intimacy that is flourished through the dining relationships, growing the aesthetics of food, relationship and society.
