摘要: 
本發明係關於一種鑑定肉品種別及/或新鮮度之方法,更特別地係關於利用高效能液相層析術(HPLC)結合電化學(EC)偵測方法簡易、快速地鑑定肉品種別及/或其新鮮度之方法。本發明利用HPLC-EC方法分析層析圖譜中2-4個主要波峰的特徵,即可清楚區分出肉品種別,樣本的製備簡單,不需要有機溶劑處理,亦無需進行衍生化作用,大幅縮短分析時間至15分鐘。本發明亦可進一步應用在肉品新鮮度與摻劣度方面之評估,極具產業利用價值。本發明亦提供用以實施該鑑定方法之裝置,其特徵在於包含液相層析分離管柱,含電化學流動偵測器及數據分析儀器。 A simple, rapid and reliable method based on high-performance liquid chromatography with electrochemical detection was developed to routinely identify food meat species. The method requires no derivatization or extraction steps and may be used to evaluate fresh or cooked meats. This method is also demonstrated to be applicable for evaluation of meat freshness and detection of adulteration. The claim of the method includes the devices that carried out the analysis.
