Exopolysaccharide produced by lactic acid bacteria can assist in yogurt texture maintenance. This study is carried out to select exopolysaccharide producing lactic acid bacteria in the manufacture of yogurt to see how it can help in texture promoting. Besides, the exopolysaccharide itself owns some health promoting characters which would be examined with respect to prebiotics and cholesterol lowering in this study.
