水禽屠宰過程中之裹蠟衛生及安全系統之建立

Abstract

本計畫主要目的將建立水禽屠宰專用蠟膠之適當使用條件及生物安全性資料以做為業者及政府主管單位之參考，因此將評估目前水禽屠宰業者所使用的膠蠟其正常使用條件包括使用溫度、次數及其對水禽針羽之去除效果並針對其膠蠟在屠體上殘留及生物安全性(血液性狀、器官病變及繁殖影響)做評估。

The purpose of this project was to establish the optimum conditions and safety system for waxing in waterfowl slaughtering line and these data can be used as a reference for processors and the goverment. In this study, the optimum temperature, use frequence and pin feather removing of wax were be evaluated. On the other hand, the wax residue on the wterfowl carcasses also will be detected and wax will be fed experimental animal to understand the biological safety ( include blood characteristics, organs, reproduction ).
