dc.description.abstractThe three-parameter GAB equation was evaluated for its ability to describe the sorption data for several agricultural products. The GAB equation describes the relationship between equilibrium moisture content and equilibrium relative humidity (ERH) or water activity (Aw) at a fixed temperature. With Aw as the dependent variable, the equations becomes very complex. The residual plots of this model showed that it does not fit well for starch products. For most products, the parameters of the GAB equation did not exhibit the Arrhenius-type relationship with temperature. To incorporate the temperature term into the parameters, the number of parameters in the model increases, making it less useful. The GAB equation is not an adequate sorption model for all agricultural products.en_US
