自超級市場、便利商店及一般零售商店選購十種廠牌共55種包裝調味豆乾製品,
調查其標示有效保存期限、水分含量、水活性及防腐劑的使用狀況。結果發現依豆乾種類與
廠牌之不同,所標示保存期限為 7 ~ 300 日,水分含量為 16 ~ 42 %,水活性為 0.678
~ 0.943,此水分含量及水活性與所訂保存期限之相關性甚低( r ?捶怞葫? 0.214、0.346
)。未添加防腐劑的製品僅佔 5.45 %,使用的防腐劑以己二烯酸(鉀鹽)與苯甲酸(鈉鹽
)為主,添加量超過衛生標準者達八成以上之多,嚴重
