本研究以食用玉米粉及PVA(聚乙烯醇)為原料,利用4/3/3複因子實驗設計,探
討加工參數(模孔形狀、進料速率及螺軸轉速)之改變,對擠壓產品橫向膨發率、縱向膨發
、假密度、水溶性指標、吸水性指標等理化特性的影響。實驗結果顯示:(1)模孔形狀對
產品橫向膨發率、縱向膨發、假密度與水溶性指標有極顯著的影響。S形產品的橫向膨發
率最大,縱向膨發最小,水溶性指標最大,(2)進料速率增加,橫向膨發率堵加,縱向膨
發及假密度減少。(3)螺軸轉速增加,橫向膨發率增加。(4)在擠壓機的加工變數土,進料
