dc.description.abstract比色計法被用來研究米穀粉在雙軸擠壓機(APV Baker MPF50/25)內滯留 時間之分佈情形。本研究使用兩種方式來計算滯留時間之分佈情形,其一是直接 以比色計測得的紅色值來計算,其二是將紅色值轉換成濃度來計算。由結果顯 示,此兩種不同方式研究物料在擠壓機內之滯留時間分佈,有顯著之差異。利用 比色計測得的紅色值直接計算物料在擠壓機內文平均滯留時間,會比實際值大 (亦即會超估),因之,利用濃度來計算擠壓機內物科之滯留時間是唯一正確之方 式。zh_TW
