The objectives of this study were to investigate the of storage temperature and time on the storage life and quality of‘CAES 3'avocado fruit. The ripening and chilling injury of‘CAES 3'avocado fruit (persea Americana Mill.)were determined at 25℃ subsequent to 2﹐4﹐6 and 8 weeks storage at 1℃﹐3℃﹐6℃﹐9℃﹐12℃﹐or 15℃. Fruit held at 1℃﹐3℃ and 6℃ longer than 2 weeks developed chilling injury and the severity increased as the storage time increased. The fruit stored at 9℃ could hold 6 weeks without any chilling injury. From the experimental result﹐we could suppose CAES 3'avocado fruits were suitable to store at 9℃.
