近年來,有機產業蓬勃發展,消費者選購有機產品動機也逐漸從考量食材安全性開始重視食物本身風味。但有機農產品之風味是否優於以慣行農法所栽培之農產品,至今仍少有感官品評研究提供佐證。
  因此,本研究將以米、蔬菜、芽菜以及水果等四大類農產品,以有機農夫市集之消費者與生產者進行感官品評實驗,以了解品評者是否能分辨出兩者間的差異,以及探討品評者對有機農產品是否有較高的偏好。
本研究共蒐集有效樣本110份,根據研究結果顯示,大致上看來,有機農產品在感官品質上優於慣行農產品,且品評者對有機農產品有較高偏好,生產者較消費者更能品嚐出有機農產品與慣行農產品之差異。而性別與食用有機農產品時間長短較無顯著關係,但食用有機產品頻率越高者,有機農產品感官品質認知優於慣行農產品,且對有機農產品亦有較高偏好。
  本文結果希望藉由此研究,給予有機農業推廣者在與消費者溝通及行銷有機農產品時作為參考與論述,並讓有機農業與慣行農業在推廣與相關比較研究上能有更完整之立論基礎。
